蝦蛋角瓜｜Stir-Fried Luffa with Shrimp & Egg 你們吃過「角瓜」嗎？它也叫稜角絲瓜 / 勝瓜，國語裡叫「Petola」，但我不確定在其它地區有沒有不同的叫法。我是最近才接觸到這個食材的，或許小時候也有吃過吧，但我記不清了。 它跟絲瓜吃起來有點像，但我覺得它的甜度好像更高？而且它好實惠喔，1公斤要價不到2塊錢，這陣子只要在買菜的時候看到新鮮的角瓜都會買幾條回家。 角瓜的表皮上帶有稜角，看起來有點不好吃（？），所以哪怕平常在逛菜市場的時候總會留意到，但我從來都沒有動過買它的念頭 XD 讓我開始吃角瓜的契機是——不久前收到了親戚朋友自家種的角瓜，結果一試成主顧。他們家種的是「嫩綠色」的品種，跟市場上常見的「深綠色」有點不同，體型較爲短小，但吃起來更多汁、也更甜。 處理「角瓜」的方式很簡單，把它的頭尾切掉，尤其是「蒂頭比較細」的部分，吃起來有點像是在咀嚼咬不爛的纖維組織，記得要把它切掉。保留「中段 & 尾段」這兩個比較嫩的部分就好。把它粗糙堅硬的外皮削掉之後再切片就好。不要切太薄喔，不然煮一煮它就會化掉了XD 把雞蛋稍微打散一下，等「油熱了」再炒雞蛋，把蛋香味炒
